Plant-based banana bread recipe

Are you still looking for the perfect banana bread recipe? We've got you covered with this yummy plant based version. This recipe can be used to create banana loaf, or use muffin tins instead.
Ingredients:
3 ripe bananas
½ cup soy or plant milk of your choice
3 tablespoons oil
¾ cup brown sugar
2 cups flour
1 tablespoon cinnamon
3 teaspoons baking powder
¼ teaspoon salt
1/3 cup dark chocolate chips or chocolate cut into chunks + ⅓ cup extra chocolate for drizzling (if desired)
Method:
- Preheat the oven to 180°C.
- Grease and line your baking tin or muffin tins.
- Add the sliced bananas, plant-based milk, and oil to a bowl.
- Use a hand blender to combine until smooth. If you don’t have a handblender, you can mash the banana with a fork, then stir in the plant-based milk and oil.
- Add the brown sugar, flour, cinnamon, baking powder, and salt.
- Use a whisk to combine until smooth.
- Add dark chocolate chips/chunks and stir through evenly.
- Spoon the mixture into a lined loaf tin or muffin tins.
- Bake at 180°C for 60 minutes.
- Remove from oven and set aside to cool for 10 minutes, then tip the loaf or muffins onto a cooling rack.
- If using melted chocolate, melt the chocolate in the microwave or double boiler, then drizzle dark melted chocolate on top of the cooled loaf or muffins.
- Sprinkle chopped peanuts/other nuts over the loaf or muffins. (optional).
- Slice. Serve. Enjoy!
